Judy Caplan is our on-staff Registered Dietitian. She has over 25 years of experience in the field of dietetics with a specialty in health and wellness. Judy has a master’s degree in human nutrition, foods and dietetics from the University of Arizona. She has served as Director of Nutrition Services for Canyon Ranch, was a contributor to Jane Fonda’s Workout Book and founded her own nutritional consulting company, Nutrition Ammunition.
Judy guides us to develop menus that reflect guidelines she believes in and we trust her fully. Fairfax Food Service works diligently to find vendors that sell foods that meet and exceed these guidelines. No new product is introduced to our inventory unless Judy reviews it. With Judy at our side, we are happy to work with you to meet your food service needs and contribute to the development of happy, healthy students.

Whether you’re a parent, teacher or school administrator, Fairfax Food Service (FFS) knows that you are concerned about children developing good eating habits. Because we share this commitment to child wellness, we are providing our customers with access to a registered dietitian to help answer your nutritional questions. These questions can be specific to the menus served by FFS or about other nutritional issues.

She focuses on plant based diets for green living and prevention and/or therapy of diabetes, heart disease, cancer, obesity and bone/joint conditions. She has offices in Vienna, VA.
